Mr. Martin uses butter, cream, and even lard in cooking; If you do a little reading, this seems to be not such a bad idea, particularly if you like food that tastes good. The book is full of lovely recipes and good photos; what's not to like? One of the other reviewers hates the book; I imagine his dinners are mostly broccoli.
